Place: Jinka, Ethiopia
Time: Time is an illusion....I can't keep track of dates
The national food of Ethiopia is "Injera". Indeed, it seems as though the only thing to eat most times is a variety of this large pancake. The sourdough is made from grain of the Teff plant. Its poured out just like a large crepe and served with a meat sauce, cubed or minced with spices.
It is commonly set in the middle of the table and each person reaches in with their right hand and tears off a bit of Injera and grabs a bit of meat with it and eats. NO double dipping.
Needless to say, the propensity for spread of germs could be cause for concern.
Here is a typical african kitchen. It is so dark my camera has a horrible time with the low light so the shots aren't good.
When I die, I want to go to IHOP.
What I wouldn't give for a stack of blue berry pancakes, a side of eggs and ham.....
